Fired up!

Some of the most mouth-watering pizzas are not ones oozing with cheese, dripping with sauce or stacked to the skies with thick, toothsome crust, they’re thin-crust pies boasting just a smattering of components. Drop by The Copper Oven in Ovid, NY, and you’ll find yourself devouring svelte pizzas topped with minimalist ingredients sourced from the cafe’s backyard and nearby purveyors. The lush Fingerlakes is home to a myriad of wineries, but tucked between the vineyards are also upstanding restaurants like The Copper Oven churning out quality farm-to-table fare.

Set against a backdrop of verdant vineyards, The Copper Oven is a charming respite for those who need to decompress between rigorous wine tastings.With woozy heads, my husband and I settled onto the outdoor patio to nourish ourselves with a hearty lunch post our wine romps. We chuckled: there was no way we could tackle the reds and whites of neighboring Cayuga Ridge Estate Winery. So…we simply feasted.

It appeared scant and diminutive, but the “funguy” pizza actually packed a wallop. Charred edges adorned the crispy crust, an immediate reflection that this baby came straight out of the restaurant’s signature wood-fired copper oven. Creme fraiche and cheddar cheese provided a no-frills base for an elegant sprinkling of wild mushrooms, chives, truffle oil and smoked salt. We felt a rush of umami from this incredible medley of savory ingredients.

Being the natural meatheads that we are, we couldn’t bypass The Copper Oven’s charcuterie board. Wood-fired flatbread brushed with olive oil served as delicate vessels to hold locally procured salty, decadent slices of prosciutto, salami and Polish sausage. The only downside? Not enough of the zingy corn relish to crown upon these stalwart meats.

Even if you’re too spent to down another sampling of wine, you can still experience the good life with a round of The Copper Oven’s fresh-from-the-farm cuisine. Thankfully, none of the other patrons mocked us for having iced tea with our lunch.
